Berry Medley Breakfast Taco's

SERIOUSLY a SUPER scrumptious breakfast! HOW 
can you possibly go wrong with something that looks this good?!....you CAN'T! It
makes even the pickiest eater's mouth water. Its packed full of sweet fruity goodness and a touch of cream that sends you running to the table!....Its the breakfast of summer!

Berry Medley Breakfast Taco's
Taco shell batter:
2 c. flour
2 c. milk
2 eggs
1 t. baking powder
2 t. vanilla

Heat pancake griddle or non-stick frying pan. Spray with cooking spray. In a mixing bowl, combine ingredient and beat until smooth. Pour small (or the size you want your taco) "pancakes" onto hot griddle. Cook until bubbles start to pop, flip and cook the other side for 2-3 minutes or until done. Repeat until all batter is cooked. Cool taco's slightly before filling. Set aside.

Taco Filling:
1 1/2 c. strawberries, diced
1 bag Berry Medley frozen berries, thawed and drained (you could use any berry mixture or just your favorite)
1/3 c. sugar

Reddi Whip (spray whipping cream)

Mix strawberries and thawed berry mix in a mixing bowl. Add sugar and stir. Let rest for 5 minutes. 
Fill taco shells (already cooked) by spraying Reddi Whip down the center and adding fruit to the top, like a taco. Eat with a fork, as they are too juicy to eat like a taco.............but OH SO GOOD!
