Cheddar Bacon Panko Chicken

Chicken is a staple in our house...we eat it ALL the time...needless to say, I am always looking for 
new, tasty recipes to change things up a bit. This Cheddar Bacon Panko Chicken is 
a new twist to "fried" chicken and I LOVE it. The bacon adds the perfect amount of "smoky" 
goodness...the the cheese?!...well, everything is better with cheese on it! 
This is an easy dinner that can be made in just a short amount of time.

Cheddar Bacon Panko Chicken 
2 eggs
1 c. buttermilk

2 c. kikkoman panko bread crumbs
1 c. dry potato flakes
1/2 c. flour
1/2 t. pepper
1 t. garlic powder
1 t. season salt

1 c. shredded cheddar cheese
1 lb. bacon, cooked and crumbled
3 lbs boneless, skinless, chicken breast, cut into strips

Oil (for cooking)

Heat oil in a frying pan. In a small bowl combine eggs and butter milk,whisk until combined, set aside. In a shallow dish stir together bread crumbs, flour, potato flakes and spices, set aside. Dip chicken pieces into egg mixture, then into bread crumb mixture. Place in hot oil. Continue until all chicken is dipped and cooking. Cook until chicken is ALMOST done. Place chicken on a baking sheet. Top with cheese and bacon. Bake in the oven at 400 degrees until cheese is melted (about 5-7 minutes). Serve with your favorite dipping sauce or eat as is!
