Homemade Breakfast Fruit Burrito

Its memorial day weekend which often means "Family Time"....if you have a houseful
of people this would be the perfect thing to serve for a breakfast. I made up a batch and served
 it to my "little family", but its versatile enough to accommodate any crowd. It not only EASY but its 
amazingly scrumptious and leaves you feeling as though you ate at some suave little cafe! YUM!!!

Homemade Breakfast Fruit Burrito
2 cups Krusteaz pancake mix (or any "add water only" pancake mix)
enough water to make a thin pancake mix

Whisk water and pancake mix together. Spray waffle iron with cooking spray. Cook waffle until lightly browned, not crunchy (or you won't be able to roll it up). This waffle won't work in a belgian waffle iron, you need a regular waffle maker.

Cheesecake Filling:
8 oz. cream cheese, softened
1-8 oz tub of cool whip
1/3 cup powdered sugar

Fresh fruit ideas: strawberries, raspberries, bananas, blackberries, blueberries, kiwi, fresh peaches (diced)

Whip cream cheese, cool whip and sugar until smooth. Spread cheesecake filling on waffle. Add fresh fruit down the center. Roll waffle to make a "burrito" . Top with flavored cool whip (or make your own....Mix cool whip and desired amount of jello powder...any flavor...add enough to make it taste "fruity"). Enjoy this delicious breakfast treat!
