I've always liked Stroganoff, but it was never anything "special". The other day I had
some leftover roast beef and wanted to make something DELICIOUS with it. We had eaten
roast beef sandwiches the night before (we LOVE those) so we couldn't do that again...after much pondering, I came up with this fabulous little dandy of a Stroganoff recipe.
I have to say...I can now consider stroganoff a "special" dish...I love ti!
Julie's Chipped Beef Stroganoff
2 c. roast beef, cooked and shredded (if you bottle meat, this would work GREAT)
2 T. flour
2 T. Butter
1 c. beef broth (I used 1 c. water, 1 cube beef bouillon because thats what I had)
1 can cream chicken soup
1/2 c. sour cream
dash salt and pepper
1/4-1/2 t. garlic powder
4-6 cups of your favorite pasta, cooked
Make a roux by melting the butter in a large frying pan. When butter is melted, add flour and stir until combined. Continue to stir for 3-5 minutes until flour is browned. Add beef broth. Whisk together until all lumps are gone. Simmer for 5 minutes. Add cream chicken soup and sour cream. Whisk together, add seasonings. Turn heat to low and simmer for 15 minutes. Add cooked roast beef. Stir together. Serve over hot noodles....topped with cheese if desired.
