This Frito Pie is the perfect meal to make ahead and eat later, OR make the night you are
going to eat it. Its got the texture of an enchilada and
EVEN tastes similar to one. Its a people pleaser for sure!
Julie's Old Fashioned Frito Pie
1 (10 1/2 oz) bag of Frito corn chips
1 c. cooked ground beef, seasoned with 1 pkg taco seasoning
3 c. shredded cheese, divided
1 c. red enchilada sauce
1 (10 1/2 oz) can cream chicken soup
1 small can diced chilies (optional)
In a large mixing bowl, combine corn chips, cooked ground beef, 1 1/2 c. cheese, enchilada sauce, chilies (drained) and cream chicken. Mix thoroughly. Pour into a 2 quart casserole dish. Top with rest of the cheese. Bake at 350 degrees, covered, for 20-25 minutes. Remove from oven. Let stand for 5 minutes. Serve with diced tomatoes, diced avocado's and a dollop of sour cream.
