Berry Medley Breakfast Taco's

SERIOUSLY a SUPER scrumptious breakfast! HOW 
can you possibly go wrong with something that looks this good?!....you CAN'T! It
makes even the pickiest eater's mouth water. Its packed full of sweet fruity goodness and a touch of cream that sends you running to the table!....Its the breakfast of summer!

Berry Medley Breakfast Taco's
Taco shell batter:
2 c. flour
2 c. milk
2 eggs
1 t. baking powder
2 t. vanilla

Heat pancake griddle or non-stick frying pan. Spray with cooking spray. In a mixing bowl, combine ingredient and beat until smooth. Pour small (or the size you want your taco) "pancakes" onto hot griddle. Cook until bubbles start to pop, flip and cook the other side for 2-3 minutes or until done. Repeat until all batter is cooked. Cool taco's slightly before filling. Set aside.

Taco Filling:
1 1/2 c. strawberries, diced
1 bag Berry Medley frozen berries, thawed and drained (you could use any berry mixture or just your favorite)
1/3 c. sugar

Reddi Whip (spray whipping cream)

Mix strawberries and thawed berry mix in a mixing bowl. Add sugar and stir. Let rest for 5 minutes. 
Fill taco shells (already cooked) by spraying Reddi Whip down the center and adding fruit to the top, like a taco. Eat with a fork, as they are too juicy to eat like a taco.............but OH SO GOOD!

Sausage and Egg Breakfast Sandwich




We used to make these sandwiches years ago...they were actually referred to
as "Birds in a Nest"...but somehow that just didn't sound appetizing....hence the name change.
I love how quick and fun they are, besides just tasting fabulous! They are a quick
fix for a sandwich to eat on the go or to sit down and enjoy breakfast with the family!

Sausage and Egg Breakfast Sandwich
*no "amounts" are give in this recipe as it is just a matter of "how many your going to make"

Sausage 
eggs
buns
cheese
Shape sausage into round balls, flatten to desired thickness. Using a cup or something 
small and round, cut a hole from the middle of your sausage patty. Place patty in a frying 
pan and cook, flipping to to cook both sides. When patty is done, crack an egg (or beat it first to make a scrambled egg) and place in the hole of the sausage patty. Cook egg until set and almost done, then flip patty. * F you flip your patty/egg too soon the egg will run all over. 

Remove from patty/egg from the pan and top with a slice of pre-sliced
cheese while still hot. Place sandwich on bun....Ta DaH...you have breakfast!
*if you like your sandwiches with condiments (mayonnaise, ketchup etc...) add them.

Julie's Berry Medley Smoothy

This cold drink will make your holiday EVEN BETTER. Its the kind of treat you 
want to sit outside sipping while you enjoy the sunshine on your face. You will 
feel as though you are indulging in a rich specialty drink from your favorite little drink shop....
ITS THAT GOOD!

Julie's Berry Medley Smoothy

1 bag frozen "berry medley" frozen berries, partially thawed
1/3 c. sugar
1 1/2 c. fresh cut strawberries
1 banana
1 c. milk

Blend all ingredient in the blender (add milk first, as the liquid needs to be on the bottom). Serve in 4 individual drinking glasses. Top with a dollop of whipped topping. Enjoy!!

Homemade Breakfast Fruit Burrito

Its memorial day weekend which often means "Family Time"....if you have a houseful
of people this would be the perfect thing to serve for a breakfast. I made up a batch and served
 it to my "little family", but its versatile enough to accommodate any crowd. It not only EASY but its 
amazingly scrumptious and leaves you feeling as though you ate at some suave little cafe! YUM!!!

Homemade Breakfast Fruit Burrito
2 cups Krusteaz pancake mix (or any "add water only" pancake mix)
enough water to make a thin pancake mix

Whisk water and pancake mix together. Spray waffle iron with cooking spray. Cook waffle until lightly browned, not crunchy (or you won't be able to roll it up). This waffle won't work in a belgian waffle iron, you need a regular waffle maker.

Cheesecake Filling:
8 oz. cream cheese, softened
1-8 oz tub of cool whip
1/3 cup powdered sugar

Fresh fruit ideas: strawberries, raspberries, bananas, blackberries, blueberries, kiwi, fresh peaches (diced)

Whip cream cheese, cool whip and sugar until smooth. Spread cheesecake filling on waffle. Add fresh fruit down the center. Roll waffle to make a "burrito" . Top with flavored cool whip (or make your own....Mix cool whip and desired amount of jello powder...any flavor...add enough to make it taste "fruity"). Enjoy this delicious breakfast treat!

Halle's Spicey Shrimp

 I could live on the coast and eat seafood every day....I adore it, I crave it, and when I get the chance 
to eat it, I am afraid I look sort of like a kid in a candy store.....I want it all!! We bought some shrimp and I wanted to make something special with it, but couldn't find the "right" recipe. My 17 year old daughter took 
over and whipped up this little gem of a dish! It was perfect. Its easy, has a spicy zip to it, crazy delicious and completely hit the spot! 
She's a great cook and I love that she likes to cook as much as I do!

Halle's Spicey Shrimp
2 c. cooked, shelled shrimp
1 t. chili powder
2 t. garlic powder
1 t. lime juice
oil

Place a small amount of oil in a frying pan. Heat oil.  Saute shrimp for 1-2 minutes. Add seasonings and lime juice. Stir shrimp to cover it with spices. Cook until shrimp is hot but not crunchy. Serve with steamed rice.

Julie's Easy Peasy Summer Fruit Salad

I'm love the fact the summer is ALMOST here. We've had days that feel like summer
BUT we have still had cold, winter feeling days. I like to serve fruit salad 
frequently in the summer months. Its easy and tastes great! This summer salad is filling
yet, light enough you can have a second or third serving if you WANT TO. MMMmm...so eat up!

Julie's Summer Fruit Salad 
* I'm not putting amounts for the ingredient, that is up to you

Cottage cheese
your favorite fruit:
sliced oranges
sliced or diced strawberries
blueberries
raspberries
kiwi
diced pears
fresh peaches

Place cottage cheese on the bottom of each serving dish (1/2 c. makes a serving...but add as much as you want). Place fruit on top. Sprinkle with a little sugar on top or top with whipped topping if desired. Sometimes I stir mine together, but not everyone likes it that way, so I serve it without being stirred (most of the time). Yep...its that easy!

Julie's Old Fashioned Frito Pie

This Frito Pie is the perfect meal to make ahead and eat later, OR make the night you are
going to eat it. Its got the texture of an enchilada and 
EVEN tastes similar to one. Its a people pleaser for sure!

Julie's Old Fashioned Frito Pie
1 (10 1/2 oz) bag of Frito corn chips
1 c. cooked ground beef, seasoned with 1 pkg taco seasoning
3 c. shredded cheese, divided
1 c. red enchilada sauce
1 (10 1/2 oz) can cream chicken soup
1 small can  diced chilies (optional)

In a large mixing bowl, combine corn chips, cooked ground beef, 1 1/2 c. cheese, enchilada sauce, chilies (drained) and cream chicken. Mix thoroughly. Pour into a 2 quart casserole dish. Top with rest of the cheese. Bake at 350 degrees, covered, for 20-25 minutes. Remove from oven. Let stand for 5 minutes. Serve with diced tomatoes, diced avocado's and a dollop of sour cream.

Easy Taco Salad and Bowls

Okay, Okay...so you have all probably made these BUT I LOVE THEM. They are so 
easy and tasty and make the BEST quick meal because you can fill them with just about ANYTHING!

Easy Taco Salad and Bowls
6-8 tortilla shells
Oil (for frying)

Pour oil (deep enough for your shell to fit in as it folds up around the can or jar) in a heavy sauce pan and heat until hot. Place tortilla shell in oil, place a quart jar, filled with water, on top of the center of the shell. The part of your shell that is not weighed down will sort of curl up and making a bowl. Fry for 1- 1 1/2 min or until shell is done. Sprinkle with shredded cheese while still hot. Fill with your favorite toppings...I filled mine with: Ground beef seasoned with taco seasoning, black beans (drained), canned corn (drained), diced tomatoes, shredded cheese and sour cream....Use whatever YOU like to put on your taco....BUT I am going to fix this again and use chicken and avocado....YUM!!

*** HEALTHY version of the shell (Thanks to my dear friend Maylene): Spray the bottom of a microwave safe bowl or cup with pan coating. Turning the cup/bowl upside down (so bottom is facing up) place a tortilla shell on it. Microwave for 1 minute, remove from microwave and let sit for 1 minute then fill your taco bowl with your favorite toppings.

White Chocolate Caramel Waffles

Breakfast is the best meal of the day...I thoroughly believe that. THESE fabulous 
White Chocolate Caramel Waffles are a great way to start any morning, OR EVEN end any
day! They make my mouth water just looking at the picture....scrumptiously delicious!!

White Chocolate Caramel Waffles

2 c. flour
2 c. milk
1 T. baking powder
3 T. oil
2 egg yolks
2 t. vanilla
2 egg whites

Beat egg whites until stiff and fluffy. Mix remaining ingredient together. Fold in beaten egg whites. Heat waffle iron and spray with pan coating. Pour in 1/2 c. of waffle batter and cook until done. Serve with butter and topping (below).

Topping:
1 bottle caramel ice cream topping
white chocolate chips
frozen blueberries....partially thawed

Drizzle caramel on top of cooked waffle. Top with white chocolate chips and blueberries.

Julie's Chipped Beef Stroganoff

I've always liked Stroganoff, but it was never anything "special". The other day I had 
some leftover roast beef and wanted to make something DELICIOUS  with it. We had eaten 
roast beef sandwiches the night before (we LOVE those) so we couldn't do that again...after much pondering,  I came up with this fabulous little dandy of a Stroganoff recipe. 
I have to say...I can now consider stroganoff a "special" dish...I love ti!

Julie's Chipped Beef Stroganoff
2 c. roast beef, cooked and shredded (if you bottle meat, this would work GREAT)
2 T. flour
2 T. Butter
1 c. beef broth (I used 1 c. water, 1 cube beef bouillon because thats what I had)
1 can cream chicken soup
1/2 c. sour cream
dash salt and pepper
1/4-1/2 t. garlic powder
4-6 cups of your favorite pasta, cooked 

Make a roux by melting the butter in a large frying pan. When butter is melted, add flour and stir until combined. Continue to stir for 3-5 minutes until flour is browned. Add beef broth. Whisk together until all lumps are gone. Simmer for 5 minutes. Add cream chicken soup and sour cream. Whisk together, add seasonings. Turn heat to low and simmer for 15 minutes. Add cooked roast beef. Stir together. Serve over hot noodles....topped with cheese if desired.

White Chocolate Almond Pancakes

Mmmmm....Monday pancakes...YUM! 
These White Chocolate Almonds Pancakes are rich with flavor and are the perfect way to start your day!
White Chocolate Almond Pancakes
6 eggs
2 c. flour
2 c. milk
3 T. sugar
2 1/2 t. baking powder
1/4 t. salt
1/4 c. chopped almonds
1 c. white chocolate chips, divided

Mix eggs and sugar and salt until combined. Add flour, baking powder and milk...alternating the two of them. Stir until completely mixed. Add nuts and 1/2 c. white chocolate chips. Cook on a hot griddle or frying pan sprayed with cooking spray...1-2 minutes per side.  Serve with maple syrup and remainder white chocolate chips.

Cheddar Bacon Panko Chicken

Chicken is a staple in our house...we eat it ALL the time...needless to say, I am always looking for 
new, tasty recipes to change things up a bit. This Cheddar Bacon Panko Chicken is 
a new twist to "fried" chicken and I LOVE it. The bacon adds the perfect amount of "smoky" 
goodness...the the cheese?!...well, everything is better with cheese on it! 
This is an easy dinner that can be made in just a short amount of time.

Cheddar Bacon Panko Chicken 
2 eggs
1 c. buttermilk

2 c. kikkoman panko bread crumbs
1 c. dry potato flakes
1/2 c. flour
1/2 t. pepper
1 t. garlic powder
1 t. season salt

1 c. shredded cheddar cheese
1 lb. bacon, cooked and crumbled
3 lbs boneless, skinless, chicken breast, cut into strips

Oil (for cooking)

Heat oil in a frying pan. In a small bowl combine eggs and butter milk,whisk until combined, set aside. In a shallow dish stir together bread crumbs, flour, potato flakes and spices, set aside. Dip chicken pieces into egg mixture, then into bread crumb mixture. Place in hot oil. Continue until all chicken is dipped and cooking. Cook until chicken is ALMOST done. Place chicken on a baking sheet. Top with cheese and bacon. Bake in the oven at 400 degrees until cheese is melted (about 5-7 minutes). Serve with your favorite dipping sauce or eat as is!
